I’m obsessed with poke… like, totally. I love fish, I love the veggies, I love rice, I love everything in poke. With that being said, poke is god damn expensive. $20 for a bowl?? I don’t think so. So, I’ve started making my own bowls! I absolutely love how I can customize them to whatever I have in my fridge, and it’s so healthy….

Here is my personal recipe for you! It’s a 2-parter, but it’s sooo easy.

Tuna Poke Bowl

Servings 1 Person

Ingredients

  • 1 cup cooked rice I used red, but you can use brown too
  • 1 whole raw tuna steak cut up into small cubes
  • 2 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp sesame seeds
  • 1/2 tsp red chilli flakes
  • 1/4 cup spinach chopped
  • 1 handful baby carrots chopped
  • 1 handful cherry tomatoes sliced
  • 1/2 cup cucumber diced
  • 6 slices japaleno pepper, seeds in
  • salt and pepper to taste

Instructions

  1. Cook the rice first off, I had rice in my fridge already BUT if you want to cook red or brown rice, it’s 1 cup of rice to 1 3/4 cups of chicken broth, done on manual for 22 minutes in the Instant Pot.

  2. While the rice is cooking, chop the tuna and put it into a bowl or a Tupperware container. 

  3. Mix the soy sauce, vinegar, sesame oil, sesame seeds and red chilli flakes in a bowl and whisk, pour over the tuna and let it soak while you prepare everything else.

  4. Cut up your veggies and put it on a plate and put the tuna on top. EASY! Enjoy!
