I have such an infatuation with soup. I love the fact that I make make a giant ass pot of it and have it throughout the course of my week. I also love that most times that I do make soup, it’s because I need to use up the last of the produce in my fridge that would otherwise go bad.

But this soup isn’t exactly the type of soup where you empty the contents of your fridge into it. Actually, it only requires a few ingredients to make! I love this soup because 1. I love tomatoes so much and very much dislike canned tomato soup, 2. I love the taste of the ingredients in the soup, and 3. It’s the most easiest thing to make the entire world.

I was first introduced to this soup by my cousin (who I think makes it better than I do but I’m not exactly sure what his secret ingredient is….. ahem) so you can give him all the credit for this!

Tomato Dill Soup

Servings 4 big bowls


  • 2 cans diced tomatoes I like the kind that comes with Italian herbs
  • 1 whole onion quartered and sliced
  • 1 bunch fresh dill chopped
  • 1 container chicken broth about 1 litre
  • 2 tbsp garlic minced
  • 1 tbsp dried basil leaves


  1. Heat the onion and garlic in the pot with a bit of extra-virgin Olive Oil, until the two are fragrant. 

  2. Add the cans of tomatoes directly into the pot along with the container of chicken broth.

  3. At this point, once the onions are very soft, I use a hand blender and blend the soup until there are still SOME chunks left and is not completely smooth.

  4. Remove from heat once you get to your desired consistency and add the fresh dill and the basil leaves at this point.

  5. Stir and enjoy!
