New Recipe: Tofu Hummus Wrap!

Today I woke up feeling really friggen good. I’ve had a bit of a rough patch that I’m working through lately and today I was super mindful with how I was feeling and totally ran with it. I got up, made my bed (I ALWAYS do this – I don’t know why…) made some green tea infused with some grapefruit herbal tea, and cut up a grapefruit to have for breakfast. I turned on Friends (because that show can make me happy no matter what!) and sat and enjoyed my tea and my fruit. I hopped into the shower after, got all clean lol, and then decided – you know what, I want to do some yoga.

I hopped onto YouTube and found my favourited Yoga With Adriene channel, found a video that stood out to me in that moment and set my mat up and practiced. This morning’s yoga practice wasn’t as “yoga-y” as normal, it was a video of yoga moves and postures focused on the core and the BOOT-AY! Needless to say, in a span of 30 minutes I probably did about 200 squats and squat poses that were brutally amazing, I was sweating a ton by the time I was done. I’m slowly adding in body weight resistance exercises into my exercise routine and this was part of the start!

Anyways – so when I was done yoga, I was hungry… because when am I not hungry? So I decided to film myself making my lunch, a tofu hummus wrap!

I filmed myself when I made my actual lunch but I didn’t like how it turned out, so I re-filmed when I made it a second time for my dinner to take with me to work tonight. So I walk through it in this video, but I’m going to lay it out text-style so y’all have some guidance and don’t have to watch me a million times :).

Omg so I ACTUALLY TALK in this video and walk through it – I’m super awkward so cut a girl some slack LOL…

It actually turned out well and it’s super easy so I’ll probably be making it more often now that I’ve discovered it.

Of course I also decided to eat the leftover kale – cuz who can let baked kale go to waste?

Instructions
  1. Rip the kale leaves off of the stems. Place on a tinfoil lined baking sheet. Drizzle a small amount of EVOO and seasoning of your choice. Mix around but lay the leaves flat out again and evenly dispersed. Bake kale at 450F until the outter edges are turning brown and the leaves are crispy.
  2. Heat a small amount of EVOO in a pan, and when pan is hot, place tofu in and fry until it's as crispy as you'd like it.
  3. Spread wrap out on a plate, spread hummus all across it.
  4. Add basil, onions, avocado, tomato, kale, tofu and any additional seasons or toppings that you'd want. Roll up and enjoy!
